LQ's Cupcake Surprise!

Sobz. Who can help me with my matrices, complex numbers, difference equation and differential equation? Math never make any sense to me. =(

Went Chengjia's friend, Jocelyn's place to bake cupcakes on Tues. It didn't take as long as I thought. The whole baking process took us less than 2 hours, and that includes making the frosting. Ha. I took the recipe off the internet but I think it taste pretty good! Haha.

Choco Cupcake Recipe:

1/2 cup (1 stick) butter, room temp

1-1/4 cups sugar

2 large eggs, room temp

3/4 cup flour

1/2 teaspoon baking powder

1/4 teaspoon baking soda

1/4 teaspoon salt

1/2 cup unsweetened cocoa powder

1/2 cup milk

1 teaspoons vanilla

1. Preheat oven to 375 degrees F.

2. Beat butter until softened. Add sugar and beat until light and fluffy, about 3 minutes.

3. Add eggs, one at a time, beating until well combined.

4. Measure the flour, baking powder, baking soda, salt, and cocoa powder into a small sized bowl and whisk to combine.

5. Measure out the milk and vanilla and stir to combine

6. Add about a third of the dry ingredients to the butter/sugar and beat to combine. Add about a half of the milk/vanilla and beat to combine. Continue adding, alternating between dry and wet and finishing with the dry.

7. Scoop batter into cupcake cups about 2/3’s full. Turn oven down to 350 degrees and bake cupcakes for about 22-25 minutes or until a cake tester comes out clean.

We made cheesybutter frosting and decor with hearts/ M&M chocolates etc. Hmm.. Don't look too nice but stillllllllllll I think we deserve all the compliments. Ha.

Anyway, I wanted to give WL a surprise on probably today because I'll be going HK/Macau on sunday and that means no Valentine's Day. But then~ all thanks to him~ there isn't any more surprise. Sob sob. I meet him for dinner after the baking session. I was planning to go home to put the stuffs first but he reach Causeway so fast that I don't have a chance to do so. =( I managed to hide it from his sight for around 1/2 hour until he saw it when I went to withdraw money. Arghh!! Qi si ren!

Did I mention that we played monopoly deal after baking the cupcakes? It's surprisingly fun! Saw the game but didn't thought of trying because I thought it would be the same as the traditional monopoly game. Ha. But it's totally different! Anyway.... I got the game today at Metro. Haha. Always so fast in getting play stuffs. Hur hur!
